Coconut-rich broth infused with galangal, aromatics, and gentle heat.

Start from chicken bone broth or pork bone broth from foundational bone broths. Galangal, lime leaf, and coconut fold into that foundational stock; no new bone simmer required.

Ingredients

  • 2.5 L foundational chicken or light pork bone broth
  • Galangal, lemongrass, lime leaves, shallots, chilies
  • 400 ml coconut milk
  • Mushroom or sliced chicken for the bowl
  • Fish sauce, lime juice, palm sugar

Method

  1. Simmer aromatics in foundational broth until fragrant.
  2. Add protein; pour in coconut milk and heat through without hard boil.
  3. Season with fish sauce, lime, and sugar; garnish with cilantro.
