Clear southern Vietnamese noodle soup with hu tieu noodles, pork, and a gentle sweet-savory broth.
Build on pork bone broth with chicken bone broth as foundational stocks. Hu tieu stays pale and clean—a short simmer with garlic and rock sugar, not a new bone extraction.
Ingredients
- 1.5 L pork bone broth
- 1 L chicken bone broth
- 300–400 g hu tieu (rice or tapioca-rice) noodles
- Pork loin or minced pork, garlic, shallots
- Rock sugar, fish sauce, white pepper
- optionalShrimp or quail eggs
- Bean sprouts, celery leaves, fried garlic
Method
- Combine broths; simmer with garlic and shallots 20–30 minutes; skim for clarity.
- Season with fish sauce, sugar, and pepper.
- Cook noodles separately; blanch bean sprouts.
- Portion noodles, hot broth, pork, and garnishes.
