Dan Zai Noodles

Small-bowl Tainan-style noodles with shrimp, pork, and a short, savory pork-chicken stock.

Build on pork bone broth and chicken bone broth as foundational stocks. Dan zai is a modest portion: concentrated liquor, oil-poached shrimp, and fresh noodles.

Ingredients

  • 1.5 L pork bone broth
  • 1 L chicken bone broth
  • Small wheat noodles (oil noodles or yi mein style)
  • Dried shrimp, garlic, shallots
  • optionalCilantro and black vinegar at the bowl
  • Light soy, white pepper, lard or neutral oil
  • optionalBraised pork corner

Method

  1. Combine broths; simmer with dried shrimp and aromatics 20–30 minutes for depth.
  2. Fry shallots and garlic in oil until crisp; reserve some for topping.
  3. Season broth lightly; cook noodles until tender.
  4. Portion small bowls: noodles, hot broth, fried aromatics, and herbs.
