Herbal Bak Kut Teh
Dark herbal pork broth brewed with medicinal roots, garlic, and warming spices.
Start from pork bone broth on foundational bone broths. The dark herbal layer steeps into liquid you already extracted; pork shank is optional for the bowl, not for starting a second full stockpot from water.
Ingredients
- 2.5–3 L foundational pork bone broth
- Herbal mix: dang gui, rehmannia, goji, red dates, eucommia bark (as preferred)
- Dark soy, rock sugar, whole garlic
- White pepper to finish
- optional600 g pork shank for serving
Method
- Simmer herbs in half the broth 20–30 minutes to extract (or use a sachet).
- Add remaining broth, garlic, and optional shank; simmer until meat is tender and soup darkens.
- Season with dark soy and sugar; serve hot with you tiao or rice.
