Coconut-rich broth infused with galangal, aromatics, and gentle heat.
Start from chicken bone broth or pork bone broth as foundational broth. Galangal, lime leaf, and coconut fold into that stock; no new bone simmer required.
Ingredients
- 2.5 L chicken bone broth or pork bone broth
- Galangal, lemongrass, lime leaves, shallots, chilies
- 400 ml coconut milk
- Mushroom or sliced chicken for the bowl
- Fish sauce, lime juice, palm sugar
Method
- Simmer aromatics in the bone broth until fragrant.
- Add protein; pour in coconut milk and heat through without hard boil.
- Season with fish sauce, lime, and sugar; garnish with cilantro.
