RAMEN & PHO

Pork + Chicken

A classic ramen broth with pork richness balanced by clean chicken flavor.

Ingredients

  • 1 kg pork neck bones
  • 1 kg chicken backs or carcasses
  • 1 onion, halved
  • 1 knob ginger, sliced
  • 4 cloves garlic
  • 4 L cold water

Method

  1. optionalBlanch pork and chicken bones for 10 minutes, then rinse.
  2. Add bones, aromatics, and water to a large pot.
  3. Bring to a boil, then simmer 10-14 hours.
  4. Skim foam during the first 90 minutes.
  5. Strain and adjust salt when serving with tare.
