Pork + Chicken
A classic ramen broth with pork richness balanced by clean chicken flavor.
Ingredients
- 1 kg pork neck bones
- 1 kg chicken backs or carcasses
- 1 onion, halved
- 1 knob ginger, sliced
- 4 cloves garlic
- 4 L cold water
Method
- optionalBlanch pork and chicken bones for 10 minutes, then rinse.
- Add bones, aromatics, and water to a large pot.
- Bring to a boil, then simmer 10-14 hours.
- Skim foam during the first 90 minutes.
- Strain and adjust salt when serving with tare.
