Sesame Oil Chicken Noodles
Ginger and sesame-oil chicken with noodles in a warm, aromatic chicken stock.
Use chicken bone broth as foundational broth. Sesame oil, ginger, and rice wine perfume the stock for a noodle bowl version of má yóu jī.
Ingredients
- 2.5 L chicken bone broth
- 6–8 bone-in chicken thighs or a whole chicken, cut up
- Sesame oil, ginger slices, rice wine
- Thin wheat or rice noodles
- Salt, white pepper, scallion
- optionalRehydrated shiitake
Method
- Warm the chicken bone broth in a pot.
- Sear chicken in sesame oil with ginger; add wine and a ladle of broth; reduce briefly.
- Return chicken to the pot with remaining broth; simmer 25–40 minutes until cooked through.
- Cook noodles separately; portion noodles, broth, and chicken; finish with scallion.
