Sesame Oil Chicken Noodles

Ginger and sesame-oil chicken with noodles in a warm, aromatic chicken stock.

Use chicken bone broth as foundational broth. Sesame oil, ginger, and rice wine perfume the stock for a noodle bowl version of má yóu jī.

Ingredients

  • 2.5 L chicken bone broth
  • 6–8 bone-in chicken thighs or a whole chicken, cut up
  • Sesame oil, ginger slices, rice wine
  • Thin wheat or rice noodles
  • Salt, white pepper, scallion
  • optionalRehydrated shiitake

Method

  1. Warm the chicken bone broth in a pot.
  2. Sear chicken in sesame oil with ginger; add wine and a ladle of broth; reduce briefly.
  3. Return chicken to the pot with remaining broth; simmer 25–40 minutes until cooked through.
  4. Cook noodles separately; portion noodles, broth, and chicken; finish with scallion.
