Chinese Herbal Chicken Noodles

Slow-simmered chicken with TCM-style herbs and noodles in a gentle chicken stock.

Start from chicken bone broth as foundational broth. Herbal chicken noodles use a light sachet in stock you already have—warming, not heavy.

Ingredients

  • 2.5–3 L chicken bone broth
  • Whole chicken pieces or thighs
  • Herbal mix: goji, red dates, dang gui, astragalus, ginger
  • Wheat or rice noodles
  • Salt, white pepper, rice wine

Method

  1. Add chicken and herbs to warm chicken bone broth.
  2. Simmer 45–75 minutes until chicken is tender.
  3. Season lightly; slice chicken.
  4. Cook noodles; serve with hot broth and herbs strained or left rustic.
