Chinese Herbal Chicken Noodles
Slow-simmered chicken with TCM-style herbs and noodles in a gentle chicken stock.
Start from chicken bone broth as foundational broth. Herbal chicken noodles use a light sachet in stock you already have—warming, not heavy.
Ingredients
- 2.5–3 L chicken bone broth
- Whole chicken pieces or thighs
- Herbal mix: goji, red dates, dang gui, astragalus, ginger
- Wheat or rice noodles
- Salt, white pepper, rice wine
Method
- Add chicken and herbs to warm chicken bone broth.
- Simmer 45–75 minutes until chicken is tender.
- Season lightly; slice chicken.
- Cook noodles; serve with hot broth and herbs strained or left rustic.
