Dan Dan Soup Noodles

Sichuan noodles in a spicy, nutty, savory broth—doubanjiang, sesame paste, and chili over stock you already have.

Use pork bone broth or beef bone broth as foundational broth. Dan dan soup noodles bloom chili oil and sesame in that stock for a bowl distinct from dry dan dan mian.

Ingredients

  • 2 L pork bone broth or beef bone broth
  • Fresh wheat noodles
  • Sesame paste, chili oil, soy sauce, black vinegar
  • Garlic, ginger, Szechuan peppercorn, scallion
  • optionalGround pork or ya cai
  • Peanuts or sesame, preserved mustard greens

Method

  1. Warm the bone broth; season lightly with soy.
  2. Fry aromatics and optional pork; stir in sesame paste and chili oil.
  3. Add hot broth; simmer 10–15 minutes.
  4. Cook noodles; ladle broth over noodles with toppings.
