Mala Beef Noodles

Numbing-spicy beef noodle bowl with mala aromatics—built for noodles, not hot-pot dipping.

Use beef bone broth as foundational broth. Mala beef noodles reduce the stock slightly for cling and serve with wheat noodles and thin beef.

Ingredients

  • 2.5 L beef bone broth
  • Wheat noodles
  • Doubanjiang, dried chilies, Szechuan peppercorns
  • Garlic, ginger, beef slices
  • Light soy, sugar, scallion

Method

  1. Fry doubanjiang, chilies, and peppercorns; add garlic and ginger.
  2. Add beef bone broth; simmer with beef 20–30 minutes.
  3. Reduce slightly for a richer noodle bowl.
  4. Cook noodles; serve with broth, beef, and scallion.
