Lanzhou Beef Noodles

Ingredients
- 2.5–3 L beef bone broth
- Fresh pulled or wide wheat noodles
- Daikon or white radish, beef slices or shank
- Ginger, garlic, star anise, cassia (light sachet)
- Salt, white pepper, cilantro, chili oil at the bowl
Method
- Simmer radish and spices in beef bone broth 30–45 minutes.
- Cook beef in the broth until tender; slice thin.
- Skim for clarity; season with salt.
- Cook noodles; serve with broth, beef, radish, and herbs.
