Lanzhou Beef Noodles

Hand-pulled-style beef noodle soup with clear broth, white radish, and halal-style beef aromatics.

Begin with beef bone broth as foundational broth. Lanzhou bowls stay clear: radish, gentle spices, and noodles in stock you already extracted.

Ingredients

  • 2.5–3 L beef bone broth
  • Fresh pulled or wide wheat noodles
  • Daikon or white radish, beef slices or shank
  • Ginger, garlic, star anise, cassia (light sachet)
  • Salt, white pepper, cilantro, chili oil at the bowl

Method

  1. Simmer radish and spices in beef bone broth 30–45 minutes.
  2. Cook beef in the broth until tender; slice thin.
  3. Skim for clarity; season with salt.
  4. Cook noodles; serve with broth, beef, radish, and herbs.
