Chongqing Xiao Mian

Chongqing small noodles in a fierce, fragrant beef broth with dried chilies and Szechuan pepper.

Start from beef bone broth as foundational broth. Xiao mian is a short, intense layering of chili, pepper, and aromatics—not a second beef extraction.

Ingredients

  • 2.5 L beef bone broth
  • Fresh or dried Chongqing-style wheat noodles
  • Dried chilies, Szechuan peppercorns, garlic, ginger
  • Doubanjiang, soy sauce, vinegar
  • optionalPeas or greens

Method

  1. Bloom chilies and peppercorns in oil; add doubanjiang and garlic.
  2. Pour in hot beef bone broth; simmer 20–30 minutes.
  3. Season boldly; cook noodles until chewy.
  4. Portion small bowls with broth, noodles, and greens.
