Chongqing Xiao Mian
Chongqing small noodles in a fierce, fragrant beef broth with dried chilies and Szechuan pepper.
Start from beef bone broth as foundational broth. Xiao mian is a short, intense layering of chili, pepper, and aromatics—not a second beef extraction.
Ingredients
- 2.5 L beef bone broth
- Fresh or dried Chongqing-style wheat noodles
- Dried chilies, Szechuan peppercorns, garlic, ginger
- Doubanjiang, soy sauce, vinegar
- optionalPeas or greens
Method
- Bloom chilies and peppercorns in oil; add doubanjiang and garlic.
- Pour in hot beef bone broth; simmer 20–30 minutes.
- Season boldly; cook noodles until chewy.
- Portion small bowls with broth, noodles, and greens.
