Thai Beef Noodle Broth

Beef broth layered with star anise, cinnamon, garlic, and warming herbs.

Start from beef bone broth (or beef pho if you want pho spice already in the base) from foundational bone broths. This pass adds Thai spice sachet, dark sweet notes, and a shorter simmer for noodle-shop balance.

Ingredients

  • 2.5–3 L foundational beef bone broth (or beef pho broth)
  • Star anise, cinnamon stick, coriander seeds, white pepper (sachet)
  • 6 cloves garlic, 1 onion, 1 knob ginger
  • Dark soy and rock sugar
  • optionalFish sauce for depth

Method

  1. Combine foundational beef broth with aromatics and spice sachet.
  2. Simmer 45–75 minutes; reduce slightly if you want more intensity.
  3. Strain and skim fat as desired; season with sweet-dark balance at the bowl.
  4. Serve with noodles, basil, and bean sprouts.
