Galbitang

Clear short rib broth with garlic, radish, and delicate beef flavor.

Start from a clean beef bone broth from foundational bone broths. Cross-cut short ribs and daikon simmer in that foundational stock for the classic galbitang bowl without re-running a full extraction from cold water.

Ingredients

  • 2.5–3 L foundational beef bone broth (unsalted or lightly salted)
  • 900 g–1.2 kg beef short ribs, cross-cut
  • Daikon radish, whole garlic cloves, onion
  • optionalSoaked rice water or starch rinse for clarity (traditional step)
  • Salt, white pepper, scallion to finish

Method

  1. optionalBlanch ribs briefly; rinse. Add ribs, radish, and aromatics to foundational broth.
  2. Simmer gently 1.5–2.5 hours until ribs are tender; skim often for a clear soup.
  3. Season simply; serve clear broth with tender meat and rice.
